We were honoured by the presence of a Japanese Chef for a Chef Invité focused on Japanese Flavours, Techniques and Presentation styles …


Chef Nakada Makoto is the chef de cuisine for Café Faubourg at the Sofitel in Paris.


 

On the menu for the demonstration were:

1) Miso Soup

 


 

2) Lightly cooked sea bream, pickled “plum” sauce and marinated vegetables

 


 

3) Pressed Mackerel Sushi

 


 

The HIGHLIGHTS me were my introduction to katuobushi (freshly shaved bonito), the technique for scoring and curling the sea bream with boiling stock and the method of making ‘pressed sushi‘.

 

The final presentation was a delight – embracing the Japanese Tradition and Obsession with food being a feast for the eyes as much as to be consumed for its flavour and texture.

 


 

After the Chef Invité and the exam we headed for a few celebratory drinks at the local!
